Quartermaster Advanced with National Food Safety Certification Exam
Participants will have the opportunity to learn and develop a number of skills including menu planning, food purchasing, safe food handling, sanitation, food preparation and how to do food services in a variety of settings (indoor, outdoor) with limited or full equipment. Participants will gain hands on experience, theoretical, and have the opportunity to network with other Scouters. The Quartermaster Course Lead Facilitator is Derek Lawday, Canadore College Chef and School of Culinary Arts Professor.

The course is 2 weekends (April 12-14 & May 31 - June 2, 2019) at Camp Samac (Oshawa, Ontario). Participants will gain hands on experience in preparing and serving food, and proper sanitation in an indoor kitchen environment during the first weekend. The second weekend will allow for more discussion about different environments (outdoor, back woods, etc.), various types of equipment, advanced menu planning and more. There will be assignments between the weekends as well.

Course Details
You will participate in a number of theory sessions and also gain hands on experience in a Quartermaster environment. There will be some assignments that will require individual study in between the 2 weekends. The National Food Safety exam fee is included and will be written on the second weekend, successful participants will be awarded the National Food Safety Certification. Course topics include:
